"one can't think well, love well, sleep well if one hasn't dined well "

Originating in the 1980's. The wave of modernized cooking in America in the narrowest sense is the fusion of the traditional European and Asian techniques of classic cooking with a stress on high quality and empty calorie food that simply means No fat gain but only taste gain. Food represents different meaning to different people. And American melting pot culture gives chefs the freedom to play. The books like New American Classic have become a bible to the kitchen of restaurants. So it may sound funny to have classic and modern in the same menu. If the chef doesn't neatly land into the category like pure Italian, Chinese or Indian dishes, they may mix all three flavours and the dish as a result will be the New American Classic. And this is what modern American cuisine is all about.

' A Recipe has no Soul. You as a Cook must bring Soul to the Recipe'
